The first thing I think of when I hear summer is grilling out at my parents house. Growing up, we would grill out 5 days out of the week. I was asked to create a recipe with Tyson Cornish Game Hens using a technique called Spatchcooking. I had never heard of this technique prior to now but will always use this method to cook whole poultry on the grill from here out.
The first thing that popped into my head while thinking of recipes was a take on the Bahn Mi sandwich. Bahn mi is a Vietnamese term for all kinds of bread. Bread, or more specifically the baguette, was introduced by the French during its colonial period. Typically inside of the Bahn mi is meat with vegetables including fresh cucumber slices, cilantro, pickled carrots, pickled daikon and jalapenos.
I cooked the hens for 25 minutes at med-high heat. Meanwhile, I made the pickled vegetables and prepared my french bread. Once it was time for them to come off the grill, I let them cool to touch and removed the meat from the bone.
I have to say, these Bahn Mi style sandwiches came out perfect. Right now, you can find a Tyson Cornish Game Hen Twin Pack with a 10 oz bottle of Kikkoman sauce together at Walmart. Even better - there is a $2 coupon if you buy the combo back!
The following day, my Brother who is back home after being on the road for 6 months, called me asking all about the sandwich I made for dinner. He said he had never had anything like it and was amazed by all of the flavors. Marinating the chicken and injecting it with the Teriyaki sauce was a simple method with an excellent result.
Recipe
2 Tyson Cornish Game Hens
Kikkoman Teriyaki Sauce
Cucumber
Daikon & Carrots cut into match sticks and pickled - click here for a pickling recipe
French Bread, layered with mayonnaise and toasted
Cilantro
Jalapeno
Directions
Marinate Tyson Cornish Game Hens with Kikkoman Teriyaki Sauce and seasonings of choice. I used ginger powder, garlic powder, salt and pepper. I also infused the hens using a meat marinade needle.
Cook Cornish Game Hens on a med-high grill, using one of the techniques mentioned above (or both!). Once fully cooked, remove from the grill and remove from the bone once cooled.
Place the meat in a toasted french roll, top with pickled veggies, cilantro and jalapeno

The traditional spelling of this kind of Vietnamese sandwich is "banh" mi (H after the N). Great recipe and photos though!
