Lobster Guacamole for Cinco de Mayo #SundaySupper

Happy Cinco de Mayo! This Irish/Portuguese/Swedish/German redhead loves celebrating Cinco with too many margaritas and dining on amazing Mexican cuisine.

I was very excited to learn this weeks #SundaySupper was being hosted by one of my favorite food bloggers, Jen of Juanitas Cocina. I didn't give it a second thought as to what I would make this week - Lobster Guacamole.

Lobster Guacamole takes traditional guac up a few levels and will impress a crowd. One lobster tail is good for two avocados. Not too bad for this amazing dish!

Lobster Guacamole
2 Avocados
1 Medium Lobster Tail (thawed)
1/4 small red onion diced very small
2 cloves garlic, crushed
1/2 jalapeno diced
1/2 lime juiced or more to taste
Chili powder to taste
Dash of hot sauce - to taste
Cilantro to taste
salt, pepper to taste
Cojita Cheese

Directions
Split lobster tail down the middle, season with olive oil and Chili Lime seasoning. Broil lobster tail 6" from the broiler for 10 minutes. Set aside to cool. After cooled, dice into bite size pieces.

Split Avocados, dice and place into a Molcajete Mortar and Pestle . Add onion, garlic, lime juice, chili powder, hot sauce, salt and pepper. Blend but do not blend too much. Add 3/4 of the lobster meat and combine. Top the guacamole with the other 1/4 lobster meat and top with Cojita cheese.

  7. Really, Megan, really?!?! I am in love with this dish, seriously, and I haven't even tried it. From the moment you told me what you were making for Sunday Supper, I have been anxiously awaiting this post. PERFECT guac mixer, I love lobster! And, you can be so sure that this is one recipe I'll make from this week.

  9. I do believe that a healthy dose of lobster is just about the only thing that can improve on guac...I think I must make this very soon. After I get paid...lobster is hella expensive in Texas!!

  24. "takes traditional guac up a few levels" is an understatement. Many, many more levels than just a few. Lobster is a brilliant addition to guacamole.
