Thai Peanut Crunch Fish and a Tropical Traditions Organic Virgin Coconut Oil #Giveaway

I was recently introduced to cooking with Virgin Coconut Oil instead of regular oil. I am all about healthy cooking but I have not jumped on this bandwagon for one reason only: I hate coconut. Yet it is my boyfriend is pretty much obsessed with it. So I decided to put my reservations at bay and try making pan fried fish using Virgin Coconut Oil. Skeptical as I may have been, I could not be more impressed and I was asked to make this again.

Thai Peanut Crunch Fish using Virgin Coconut Oil


2-3 tablespoons Virgin Coconut Oil
1.5 ounces of white fish (I used Flounder)
Thai Peanut Coating (or any other coating of your preference)
Flour for dredging
1 egg for dredging

This is a super simple recipe. I picked up a package of Thai Peanut coating from Whole Foods but you can use whatever coating you prefer. Take your fish filet, dredge in whole wheat flour, then give it a quick egg bath and coat with the peanut mixture. Put your Virgin Coconut Oil in a pan, heat on medium and place your coated fish filet. I cooked it about 4 minutes on one side, 3 on the other. It was cooked perfectly and did not overwhelm you with coconut, which is what I was afraid of going into this. I served this fish along with a Asian slaw salad and Pad Thai noodles. Simply amazing. You can use this method with chicken as well. Check out this website for a ton of recipes using coconut oil.

I use coconut oil for everything from makeup remover to roasting veggies in to healing cuts and scrapes that my kids get! Its so versatile!

  15. Didn't mean to double comment.. but when I first got a sample of this coconut oil, I started making sweet potato fries. OH MY YUM!! They are soo good if you slice the super thin and then fry them up in a pan of coconut oil until they start to crisp. Delicious!

  24. I use Tropical Traditions Coconut oil everyday! I don't use any vegetable oil - only butter or coconut oil.
    I use TT coconut oil to fry (eggs mmmm), bake, moisturizer for my face. I make Coconut Bark (coconut oil and cocoa powder or baking chocolate and coconut shreds). I even eat it by the spoonful.
    There are so many recipes for Coconut Oil.

    Did I mention that I love coconut oil?
