Curtis Stone’s Acorn Squash Roasted with Thyme for Favorite Chef Inspired Dishes for #SundaySupper!

OK ladies. I have two words for you: Curtis Stone. He's an amazing chef, a great TV personality. Oh and I've met him in real life. He's cuter in person, if you could even fathom that.
Enough about my crush on Curtis. The real reason you are here today is one of my favorite Sunday Supper themes to date: Celebrity Chef Inspired Dishes! I have so many favorite celebrity chef's and own more cook books than one could imagine. I had a very hard time picking out one dish. So I broke out the cookbook I received when I met Curtis Stone, Relaxed Cooking with Curtis Stone: Recipes to Put You in My Favorite Mood. This is one of my favorite cookbooks where you can find everything you'd ever need for a dinner or social gathering. I also used this moment as an excuse to share the above photo ;)

For this Sunday Supper, I chose to make Curtis Stone's Acorn Squash Roasted with Thyme.

Prep time: 5 minutes
Roast time: 30-40 minutes
Serves 4-6

Ingredients:
2-3 acorn squash, halved length-wise, seeded and cut into ½ - ¾” wedges (tip for making the cutting easier, pierce with a fork and microwave for 2 minutes)
3 tbsp extra virgin olive oil
1 tbsp fresh thyme leaves, chopped
Sea or Kosher salt & freshly ground pepper to taste
1/3 cup pure maple syrup (I used the syrup my Maine family sent me!)

 Directions:
1. Preheat the oven to 425°F/220°C. Line a rimmed baking sheet with foil for easy clean up.
2. Toss the squash wedges with oil and place in a single layer on the prepared baking sheet. Sprinkle the thyme leaves, salt and pepper and roast for 20 minutes.
3. Using a metal spatula, turn the squash wedges over and drizzle with the maple syrup. Continue to roast until tender and golden. 10-20 minutes longer.

These are so good and have such a sweet caramelized taste to them. Thank you Curtis Stone! We have quite the lineup this week. Check out these amazing dishes!

  2. Perfect, simple, and delicious. I love roasted squash. I have found them at the farmer's markets lately for great prices. This will make a delicious side dish this week.

  4. OH yeah, easy on the eyes! Top Chef Masters is one of my fave shows and he was a great choice as host!

    The simple recipes are always the best! This sounds great!

  6. Curtis Stone is definitely easy to look at :) He did commercials for a grocery store where I used to live. I miss those :(

  7. I met Curtis Stone a couple of weeks ago too in Chapel Hill, NC! Isn't he a sweetheart? Even though there was a giant line, he spent time with everyone. The first thing he said to us was "thanks for waiting." I'm even more of a fan now that I've met him.

    1. He is a dear. I was very fortunate and was sitting at the table which was selected as the first group to meet him so we didn't have to wait in line. He spent so much time with everyone. It was amazing to see him respect his fans.
